The marbled appearance of a prime steak is important because only corn-fed well-aged cattle have the marbling necessary to be classified as USDA Prime.

Beef is inspected and graded by the U.S. Department of Agriculture and then assigned a classification:
Select, Choice or Prime. PRIME, of course, is the BEST because it is the ultimate in tenderness, juiciness and flavor. The USDA's standards are high, only 1%-2% of the beef produced each year qualifies as USDA PRIME BEEF.
